I would think the sellers data comes under an essential purpose for using the platform and you also give Amazon the right to use that data on sign up. In addition regulations state that for distance selling certain information must be provided to a prospective buyer before any order is placed, including the selling company's name, address and contact details.
There should be a data controller at Amazon.

it would also depend what the data is.
Business data related to the actual company and or legal entity doesn’t actually fall under GDPR but it does apply if the data itself could identify an individual.

The customer is yours - even Amazon will say it is your customer
Certainly for ICO you should be registered as you are processing data that could identify an individual. If you are downloading order reports you will be storing name/address details.
I think you would be on very shaky ground proving otherwise and for the nominal registration fee its not worth the risk.
